Alexander Herrera was trained in various schools on the island of Gran Canaria. After completing his studies, he worked in various traditional restaurants until he arrived at La Aquarela, which has been awarded one Michelin star and two Repsol Suns. 

This gastronomic journey laid the foundations for a blend of traditional and modern cuisine. And in 2024, he took the step to become an entrepreneur and took over the kitchen at the Sábor restaurant, where he creates a cuisine inspired by respect for the product, using a mixture of classic and contemporary techniques.
