Roberto Ruiz is also known as the king of the Tolosa bean, a product that allowed him to get to know and appreciate the local terroir.
After his time at the Frontón restaurant in Tolosa, where he was part of the Basque culinary culture for 25 years, the chef Roberto Ruiz joined the entire team at the restaurant of the Hika txakoli winery, located in a modern farmhouse in Villabona (Gipuzkoa).
At Hika, Ruiz is pursuing his own gastronomic project, based on local cuisine and products. The landscape surrounding the restaurant is the perfect backdrop for his simple and honest dishes, with a strong link to the land.
The Basque chef is known for his appreciation of black beans from Tolosa, a humble product found in local markets that had not yet made the leap to the restaurant table.
