A commitment to the future of rural cuisine

During the third edition of Terrae held in the southeast of Gran Canaria, more than 50 rural cooks from all the Spanish autonomous communities, Portugal, Italy and Colombia drafted the Declaration of Agüimes, a manifesto that calls for the recognition, protection and support of rural cuisine as cultural heritage. This document calls on public institutions to give rural gastronomy a support similar to that given to other cultural expressions such as cinema or music. The Agüimes Declaration is born with the will of continuity, since the document will serve as a basis to continue working together for the future of rural cuisine.

In recognition of all the work that Funleo has done in the kitchen and, since its creation, in the social sphere to defend indigenous communities and their values, including gastronomic values, the Colombian chef will receive the Congress Prize at this year's event.

Biodiversity treasure

The third edition of Terrae, the international congress of rural chefs, will return to Gran Canaria on March 23, 24 and 25. An adventure that goes beyond what is a gastronomic event. Terrae is a space to share concerns, projects and personal experiences and to raise the voice in defense of rural environments as generators of life and wealth. Three days with many surprises in Agüimes, Santa Lucía and Ingenio. More than 40 cooks from several countries who have in the rural world their roots and their vital project live together with producers and experts and share concerns and challenges. In its third edition, Terrae will pay tribute to the Colombian cook Leo Espinosa, the most recognized cook in Latin America and an example of connection with producers and territories.
