Fourth generation of a family business based on dedication and evolution.
Together with his sister, he continues a saga in the family restaurant next to the Sanctuary of La Bien Aparecida, patron saint of the region, and is the icon of the best contemporary cuisine in Cantabria. Growing up in a family of restaurateurs, his future was set. He went away, studied, learned and came back with new ideas. He is attached to the terroir, committed to local products, but no stranger to the excellence of any raw material he brings to the table, and to modern techniques, expressing seasonality in each dish, common sense and plasticity.
In 2023, he embarked on a new adventure with Pico Velasco, a new restaurant, event space and boutique hotel located in a 17th century Indian mansion, where he continues to reinterpret traditional Cantabrian cuisine.
