David Pérez's cuisine is steeped in Cantabrian tradition and culture.

The son of rural innkeepers, David started waiting tables as a child at El Ronquillo, the family restaurant he took over a few years ago with the help of his sister Cecilia, who is in charge of the dining room and the wines. After a long apprenticeship with Joséan Alija, from whom he says he learnt subtlety in the kitchen, David Pérez has created a cuisine that combines two worlds: the mountain and the avant-garde. 

In his cooking, David Pérez pays tribute to the environment in which his restaurant is located, a place surrounded by caves and mountains, where he also hunts and fishes. Based on the recipes he learned from his mother, who has strong Cantabrian roots, the chef updates this traditional cuisine with new ideas that earned him the title of Best Chef of Cantabria in 2014.
