Samuel Moreno is a lover of La Mancha cuisine and pays homage to it by combining traditional flavours with his own personal vision.
Samuel Moreno is the owner of an old flour mill, now converted into a luxury restaurant and boutique hotel, with more than 500 years of flour-making history behind it. Molino de Alcuneza was awarded a Michelin star in 2018, thanks to a cuisine deeply rooted in the land, where bread plays a key role in the menu. A great advocate of organic farming, Moreno serves up to seven types of bread in his restaurant, which he makes himself every day, trying to bring out the flavour of each grain.
