The young Iris Jordán is head chef at the Ansils restaurant in the Benasque Valley (Huesca), where she took over from her grandmother. An open and intuitive cook, she has a passion for game and poultry stews and bases part of her cuisine on recovering and updating traditional recipes from the valley.
In his work, local and seasonal products are a kind of religion. His knowledge of bakery and his mastery of various aspects of the sweet world (pastries, ice-cream and petits fours) give him a technical mastery that is evident in the way he solves savoury recipes.
In the dining room, she works in tandem with her brother Bruno, head waiter and wine waiter.
She was a candidate for the Madrid Fusión Cocinero Revelación 2024 award and, together with chef Alatz Bilbao (Bakea), won third place ex equo, the first time this has ever happened in the history of this award.
