After completing his studies at Barcelona's Hofmann Catering School and working in the kitchens of some of the major cookery maestros, such as Ferran Adrià, Juan Mari Arzak and Ramon Freixa, among others, Borja Marrero embarked on a new adventure in Mexico, setting up his own restaurant and fusing Spanish cuisine with Mexican culture.
After returning to the island, establishing a catering company and working as a gastronomy adviser, he set up Texeda Brewery. A restaurant with a total and absolute commitment to local produce, and sustainable techniques and processes to work with food.
At the present time he gives full rein to all those years of learning at his current restaurant Muxgo, which has won the Canary Islands' first Michelin Green Star, a "Sol" award from the Repsol Guide, the 2023 "Alimentos de España Madrid Fusión" Award, and the 2023 "Madrid Fusión Aquanaria" Sustainability Award.
