Following a traditional recipe book, faithful to his land and environment, Carmelo prepares a traditional cuisine with contemporary and creative touches.
Carmelo was a quality engineer in a graphic design company, but the kitchen was stronger and together with Nereida Rodríguez, who worked in business management, they decided to take the plunge and open a restaurant. Thus was born La Trastienda de Chago, which they define as a "house of food", forged from the memory of mothers' and grandmothers' recipes, "a cuisine of memory, survival and respect".
