With a career marked by authenticity and innovation, Filipe Ramalho is elevating Alentejo gastronomy, staying true to his roots and committed to innovation.
Born and raised in the Alentejo, the son of chefs, Filipe Ramalho trained at the Higher School of Hospitality and Tourism in Estoril. He began his career at Ljubomir Stanisic's Bistró '100 Maneiras', but it was at the Basilii Restaurant at the Torre de Palma Wine Hotel in Monforte that he spent six years trying to show the world his Alentejo identity, based on the region's native products and the traditional techniques of our gastronomy.
From this journey and in collaboration with local producers, the 'Farinheira de Castaña de Marvão' was born, which gave rise to a unique creation: the 'Tarta de Farinheira de Castaña con Pera Bêbeda®', now a registered trademark.
In 2021, he took on a new challenge by taking over the Páteo Real, a restaurant with 25 years of history. There he continues his commitment to appreciating local products and reinterpreting Alentejo cuisine, always respecting tradition but with a contemporary vision.
In addition to his daily work in the kitchen, Filipe Ramalho actively promotes Alentejo gastronomy through initiatives such as "Slaughter Day", an event that recreates the traditions associated with the use of pork, accompanied by songs from the Alentejo.
